Have a few bananas you need to use up? Chocolate chip banana bread is a great and delicious solution!

2 very ripe bananas
1/3 cup melted butter (I used unsalted, you can sub out for coconut oil too)
Pinch of salt
1 teaspoon baking soda
1 beaten egg
¾ cup coconut palm sugar
1/8 cup whole ground flaxseed meal (I used Bob’s Red Mill)
1 ½ cups gluten free flour (I used Bob’s Red Mill)
½ cup semi sweet mini chocolate chips (I used Enjoy Life brand, free of major allergens)
1.Preheat oven to 350 degrees.
2.Spray with non-stick spray or butter 4x8 loaf pan.
3.In a mixer or standalone bowl mash two bananas with a fork or potato masher.
4.Add melted butter and mix.
5.Add salt and baking soda and mix.
6.Add a beaten egg, mix together.
7.Add the coconut sugar and flax seed and mix thoroughly.
8.Add gluten free flour gradually while mixing until all combined.
9.Fold in chocolate chips.
10.Pour the batter into the pan and spread evenly.
11.Bake for 50 minutes or until knife inserted in middle comes out clean.
12.Let cool and enjoy!
