WALLINGFORD — A new Texas-style barbecue restaurant is slated to open in the former Anthony’s Sub Shop on Route 5 next month.
Roscoe’s Traveling Smokehouse plans to open a permanent location at 211 S. Colony Road. The building will also serve as a hub for its food truck.
Menu items include smoked meats, southern comfort food, breakfast sandwiches, and desserts, including peach cobbler.
Anthony’s Sub Shop closed in early October, after more than 30 years in business, when longtime owners Laura and Tony Cusano decided to retire.
Owner Dave Silvia, a Wallingford native, started his food truck five years ago with his brother Tony “Roscoe” Silvia. They have visited fairs and festivals across the state as well as weddings, graduations, birthday parties and corporate functions.
“We’ve been doing it for several years,” Silvia said. “We’re ready to go on to a storefront location.”
Economic Development Specialist Tim Ryan said barbecue restaurants have historically done well in town.
“The indication is that there is a strong market,” Ryan said.
Silvia said the stove and oven inside the restaurant were replaced. Construction on the interior of the building began in early February.
Silvia expects to open the first week of April and hold a grand opening Memorial Day Weekend.
Silvia said he and his brother will continue running the food truck and are set to serve at the Daffodil Festival in Meriden next month.
“It’s really a labor of love,” Silvia said. “We smoke food for a long time, rubs and sauces, it’s an intricate part of the taste.”
