MERIDEN – Creamy mashed potatoes meet classic pizza dough at Casa Di Roma Pizzeria on Main Street.
“Everybody loves our mashed potato pizza,” said Bash Vinca, owner of family restaurant Casa Di Roma.
“It’s a big seller.”
The Italian restaurant is in its fifth year of operation run by Vinca, his wife and his father in South Meriden.
Diners can pick from several Italian-style dishes with over 20 specialty pizzas, in addition to traditional and gluten-free varieties.
The mashed potato pizza continues to be a popular request.
“We do about 45 a week,” Vinca said of the demand.
“It tastes like a home-cooked meal,” pizza chef Mike Silvia said.
“It kind of reminds you of the mashed potatoes you used to have as a kid.”
The pizza starts off with fresh dough stretched and formed to make plenty of space for multiple spoonfuls of homemade mashed potatoes. The mashed potatoes are made daily and cooked with spices.
Once the potatoes cover most of the dough, handfuls of shredded mozzarella cheese are layered along with toppings like bacon or broccoli.
Cheddar and parmesan cheese is then sprinkled on top with garlic before the pie heads into the oven.
“People love it,” Vinca said.
The concept of mashed potato pizza has become a hit in recent years at restaurants around the state, most notably BAR in New Haven.
A few other local places that serve similar pizzas are Paradise Pizza in Wallingford and The Fire Place in Southington.
While bacon and broccoli are the most requested toppings on the mashed potato pie at Casa Di Roma, Vinca said customers can order the pizza with any toppings they want.
“We can make anything when it comes to Italian food,” he said.
“Whatever the customer wants.”
