Chocolate Peanut Butter Fudge for National Fudge Day

National Fudge day is Sunday and I decided to try my hand at making chocolate peanut butter fudge, a simple and quick Pinterest recipe. 

Ingredients:

For the chocolate layer: cooking spray, one and a half cups of semisweet chocolate chips, seven ounces of sweetened condensed milk and two tablespoons of butter.

For the peanut butter layer: one cup of butter cut into slices, one cup smooth peanut butter, half a teaspoon of vanilla extract, three and a half cups of powdered sugar, one cup of miniature peanut butter cups cut into quarters. 

To make: Spray a nine by nine inch glass pan with the cooking spray and line with tinfoil, set aside. In a microwave safe bowl, combine the ingredients for the chocolate layer and heat for 60 seconds. Stir and heat in 30 second increments until melted. Stir until smooth. 

Pour into foil lined pan into an even layer. Place in the freezer to set while making the peanut butter layer. In a microwave safe bowl, combine the peanut butter, butter and vanilla extract. Heat for 45 seconds, stir and repeat in 20 second increments until smooth when stirred. Remove from the microwave and slowly add powdered sugar, stirring constantly. 

Set aside and chop up miniature peanut butter cups. Take chocolate layer out of the freezer, pour the peanut butter layer on top and smooth out. Press chopped up peanut butter cups into the top of the peanut butter layer and place in refrigerator to set for at least an hour.

Cut up, serve and enjoy!
